I'm still hanging in there!

I apoligize for the delay in blogging.  I've had so much going on, but let me start with last week's competition at the gym.  Last week was a triumph for me, even though I came in second place, I never imagined that I would be head to head with a man who has been going to the gym for years. I never thought I could get past 5 minutes on the treadmill.  I never even thought I could make it to the gym, but I DID!. I never imagined i could lose 5 lbs, much less, 15 pounds, BUT I DID! 
God has blessed me so much!  I have made my way up to 20 minutes on the treadmill & 20 minutes on the bicycle. This is more than a diet.  This is a life change for me. Yes, I do fall and I sometimes eat really bad, but I don't quit.  I dust myself off and try again. I have found out, that if i just take the first step, God will take two!
New Recipe!!!!!
STRAWBERRY ANGELFOOD ICEBOX CAKE
I made this for my church and they devoured it.  Little did they know that, up againt the other deserts, this was very low-cal.

1 angel food cake, sqaure or bunt kind. You can make it yourself or buy it already made. However if you make this yourself and it calls for butter, you can substitute apple sauce and it comes out terrific!

1 pint of strawberries, whole.
1 cup of water
3-4 tblsp  of splenda
1 cup of low fat cool whip
cook strawberries whole on stove top with splenda & water for about 8 minutes till it forms a syrup.
Next, with a wooden spoon end, poke holes all through the pound cake. lots of holes!!!
Now pour the strawberry mixture over the cake, saving about 3 Tbls to the side.
 Refrigerate for about 1 hour.
Now mix coolwhip and strawberry mixture.
Spread it on and enjoy!

This desert is about 150-200 calories and compared to birthday cake and such...that's pretty good and well worth it!
